This simple appetizer recipe for avocado-beet hummus bruschetta is a lot more nutritious than plain avocado toast with the addition of more high-fiber foods, and 10 times more delicious! To get started, here’s what you’ll need:
- Ripe avocados
- Beet hummus (make your own or find some at Sprouts… and don’t forget to pick up your Probulin Probiotics while you’re there!)
- Sliced sourdough
- Feta cheese
- Microgreens
- Salt & pepper to taste
- Lemon or lime juice (optional)
Instructions:
- Start by broiling your bread in the oven or toasting (Tip: For larger batches, broil on low in the oven until crispy and slightly golden. For single servings, use a toaster for expediency! Bonus tip: Spray or drizzle on some extra virgin olive oil before broiling.)
- Once toasted, cut your bread into halves and layer with beet hummus, sliced avocado, feta, and microgreens. Sprinkle with salt and pepper to taste if desired. (a squeeze of lemon juice or lime also pairs well!)
