Gut-Friendly Pumpkin Turmeric Soup

Fall has begun and the cooler weather has officially arrived! While there are so many fun things about fall (pumpkin patches, spooky movies, pumpkin spiced everything), it also means cold and flu season is very well upon us.

Unfortunately, getting sick can sometimes be inevitable. There are, however, many things we can do to support our health and immune system.

One of the simplest things is maintaining a healthy diet and consuming nutrient-dense meals, but there are some specific foods that are known to help support the immune system!

We’d like to share with you a gut-friendly pumpkin turmeric soup recipe. Both pumpkin and turmeric have been known to have immune-supporting properties. In particular, pumpkin is a wonderful source of Vitamin A, while turmeric is often referred to as a superfood.

This recipe is vegan friendly and gluten free! It is also filled with delicious and cozy flavors that are sure to bring some joy to the family dinner table. To get started, here’s what you’ll need:

  • 1 tablespoon olive oil
  • 1 medium yellow onion (chopped)
  • 3 medium garlic cloves (minced)
  • 2 tablespoons chopped sage (approx. 10 leaves)
  • 4 cups vegetable broth
  • 1 can pumpkin puree (15 oz)
  • 1 ½ cans cannellini beans (approx. 22 oz)
  • 1 teaspoon turmeric
  • ½ teaspoon nutmeg
  • 1 teaspoon salt
  • Pepper to taste
  • Pepitas for garnish
  • Sourdough (on the side, optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat, then add onion and cook for 5-7 minutes, or until translucent. Add garlic and sage and cook for another minute.
  2. Add broth, pumpkin, beans, turmeric, nutmeg, and salt, and stir. Bring to a simmer.
  3. Transfer to a blender or use an immersion blender to puree the soup. If using a blender, transfer soup back to pot. Let cook for 5-10 more minutes on medium-low heat. Add salt and pepper to taste.
  4. Garnish with pepitas and serve with toasted sourdough if desired!
